I'm Matteo Caloia, the founder of (P)rind, a company born out of a simple yet transformative idea: turning Parmesan rinds, often seen as waste, into a nutrient-dense, flavorful snack that meets the demands of today's fast-paced lifestyles. As someone who grew up immersed in the rich culinary traditions of Italy, I've always appreciated the artistry and care that goes into producing Parmesan cheese, not to mention its incredible taste. In fact, I'd often get in trouble for cutting the rinds off my family's blocks of Parmesan to snack on throughout the day. As I grew more interested in how diet impacts wellbeing, I realized that the rind's great taste is coupled with unparalleled nutritional benefits, and saw an opportunity: what if we could repurpose the overlooked yet incredibly nutrient-rich rinds into something convenient, delicious, and sustainable? That's how (P)rind was born. This journey has combined my love for food, my passion for sustainability, and my desire to innovate. I've always loved cheesy snacks, but I'm a lactose-intolerant athlete. Every time I indulge I feel bad about it, looking at both the nutrition and the bloating. I wanted to contribute to a meaningful solution that could help solve this problem for us all. I struggled to get behind any of the various protein supplements, as they consistently fell short in terms of both the taste and consumption experience. Even worse, many will use sugar and other carbs to make the product palatable. The beauty of (P)rind is it leverages a completely overlooked natural superfood that is delicious and filled with not only protein, but plenty of calcium and a plethora of vitamins.
